Researchers find that potato chips, among other processed foods, are loaded with the cancer causing chemical, acrylamide (uh-kril-uh-mahyd). The substance forms when carbohydrate-rich foods are cooked at very high temperatures. Some of the worst offenders—Pringles and other potato chips and French fries. Federal regulations limit acrylamide in drinking water to just over one-tenth micrograms per 8-ounce glass. However, a six-ounce serving of French fries can contain 60 micrograms of acrylamide. That's about FIVE HUNDRED times over the allowable limit. Scientists find the amount in potato chips is even more staggering. In some cases, more than NINE HUNDRED times over the legal limit. Such studies prompted the state of California to sue potato chip makers in 2005, citing a failure to warn consumers about the health risks of acrylamide in their products. The Frito-Lay company and several other potato chip manufacturers agreed to a settlement in 2008. The companies pledged to reduce the acrylamide levels in their chips to 275 parts-per-billion by 2011, which is low enough to avoid needing a cancer warning label. But the jury is still out on whether or not manufacturers have truly reached the requirements. A major challenge lies in how the food is made. Since acrylamide is not intentionally added, but rather a byproduct of cooking or processing at temperatures above 212-degrees Fahrenheit, researchers believe that changes in the current manufacturing methods would reduce acrylamide intake by no more than 40 percent . This brings the question--have potato chip makers really succeeded in reducing acrylamide levels to within legal limits? That data has yet to be updated. However researchers do issue another warning—baked potato chips may be worse for you than fried. The U.S. Food and Drug Administration found acrylamide levels in baked chips may be at more than three times the level of acrylamide as regular chips! This comes as name brands such as Pringles and companies like Frito Lay advertise so-called healthier baked varieties of their products. In fact, research suggests that baking processed potatoes at high temperatures may be one of the worst ways to cook them. FDA findings on the name brand Ore Ida may prove the point. A study shows Ore Ida Golden Fries contain about 107 parts-per-billion of acrylamide in the regular fried variety, but the baked version contains nearly 11-HUNDRED parts-per-billion. And if that were not enough, published research also shows dozens more potential toxins form when processed food is heated to high temperatures. In the study published in 2007, scientists concluded that consumers are far less likely to ingest dangerous levels of acrylamide and other carcinogens when eating home-cooked foods compared to industrially-prepared snacks. Still, some potato chip manufacturers are working to improve the image of their products. By the end of 2011, about half of Pepsi's Frito-Lay brand snacks will be reformulated with all-natural ingredients. The switch is part of PepsiCo's master plan to tap into the healthy foods market share. The Wall Street Journal recently reported the company hopes to boost their nutrition business from $10 billion dollars to $30 billion dollars by 2020. Some 60 Frito-Lay brand snacks are scheduled for an all-natural makeover, with the company removing monosodium glutamate—also known as MSG—and replacing it with natural seasonings, such as molasses and paprika. Artificial colors will be replaced with beet juice, purple cabbage and carrots. Nutritionists warn that the reformulated chips still lack true health benefits and that the processing depletes food of valuable micronutrients. They urge consumers to eat foods that are raw or minimally processed to avoid the types of toxic byproducts that come from industrially manufactured snacks. Health care experts agree that cancer, heart disease, obesity, and diabetes have a dietary component. That, with these latest findings on toxins in convenience foods may be causing a shift in consumer demand and altering the direction of food manufacturers in a positive way. Cancer is an abnormal growth of cells. There are more than 100 types of cancer, including breast cancer, skin cancer, lung cancer, colon cancer, prostate cancer, and lymphoma. Possible signs and symptoms include a lump, abnormal bleeding, prolonged cough, unexplained weight loss and a change in bowel movements. Many cancers can be prevented by not smoking, maintaining a healthy weight, not drinking too much alcohol, eating plenty of vegetables, fruits and whole grains, not eating too much processed and red meat, and by avoiding many cancer causing foods that we have listed below. Microwave popcorn bags are lined with perfluorooctanoic acid, a compound that has been linked to various types of cancer, including liver, testicular and pancreatic cancer. Canned foods allow you to enjoy your favorite vegetables throughout the year. However, if you are concerned about your health, avoid canned food, especially canned tomatoes. The cans used to pack tomatoes and other foods are lined with a product called bisphenol A, BPA, an endocrine disruptor that may mimic or disrupt hormones and increase the risks for breast cancer, prostate cancer, early puberty, metabolic disorders, infertility, and several other problems. Farmed salmon is nowhere near as healthy as wild salmon, and eating farmed salmon puts you at a higher risk of developing cancer. Farm-raised fish are fed unnatural diets and contaminated with chemicals, antibiotics, pesticides and other known carcinogens found in materials like asbestos. Hydrogenated oils are vegetable oils, which cannot be naturally extracted like olive oil, soy or canola oil, they are chemically extracted from vegetables and is again chemically treated to change the smell and taste. This process turns unsaturated fat into a stable solid fat, resulting in trans fatty hydrogenated oil which is considered to be the worst type of fat and is known to cause cancer, heart disease, and immune system problems. Potato chips are deep-fried in temperatures above 120 degrees Celsius, which causes them to create a material called acrylamide, a well-known carcinogen found in cigarettes. Genetically modified foods (GMOs) are a rapidly growing industry and have made their way into the majority of our foods like corn, potatoes, grains and soybeans. Such food products are grown using harmful chemicals and, when consumed, can lead to immune system, brain and liver damage. Refined sugar, artificial sweeteners and fructose-rich sweeteners like high-fructose corn syrup are not good for your health. These products tend to rapidly spike insulin levels and feed the growth of cancer cells. Refined White flour contains excess carbohydrates that are not good for your health and even increase the risk of cancer. During the milling process, white flour is bleached with chlorine gas, which is highly toxic for the body. Processed meats such as ham, sausage and bacon have chemicals and preservatives like sodium nitrates, which make them bad for your health. In addition, processed meat contains excessive salt, which is also not good for you. Pickled and smoked foods are delicious but, at the same time, very harmful to the body. In fact, smoked meats that pick up tar from the smoking process cause extreme harm to your body. Plus, most pickled foods contain nitrates that turn into N-nitroso, which increases your risk of cancer.

Les fast-foods Les fast-foods sont essentiellement basés sur l’utilisation de viandes et de produits transformés, de matières grasses saturées, de sodium et de colorants artificiels, entre autres… Les modes de cuisson sont également malsains, puisque la majorité des plats rapides sont frits, et contiennent donc d’importantes quantités de matières grasses. 4. Les chips Les chips de pommes de terre comportent des quantités élevées de sodium car elles sont très salées. Rappelons que la consommation de sodium peut augmenter le niveau de cholestérol et provoquer l’hypertension, ce qui conduit potentiellement à des crises cardiaques et accidents vasculaires cérébraux. D’autre part, les chips contiennent de l’acrylamide, une substance cancérigène qui se crée lors de la transformation des aliments à des températures très élevées. Selon Dale Hattis, professeur à l’Université Clark, l’acrylamide est la principale cause du cancer aux États-Unis. 5. Les donuts Les donuts sont principalement préparés avec de la farine blanche, du sucre et des matières grasses. Ces aliments sont connus pour être responsables de la prise de poids, et capables d’augmenter le risque de certaines maladies graves telles que le diabète et les maladies cardiaques. 6. Le sucre La consommation de sucre est considérée comme une des principales causes d’obésité et de diabète. Le sucre est lié à de nombreux problèmes de santé comme les troubles du système digestif, les maladies du foie et du pancréas. La consommation de sucre a également des effets négatifs sur le cerveau, il dégrade les capacités d’apprentissage et de mémorisation, et réduit les facultés intellectuelles. 7. La viande transformée Contenant des quantités excessives de nitrates et de sodium, les viandes transformées sont nuisibles à la santé. Dès qu’ils sont absorbés, les nitrates sont transformés en nitrites et conduisent à la formation d’un produit chimique cancérigène connu sous le nom de nitrosamine. Selon l’American Institute for Cancer Research, la consommation de viandes transformées est étroitement liée à un risque accru de cancer. 8. In this video I wanted to talk about foods I try to keep out of my diet. I want to stress the word, "moderation" to you guys, though. As long as you are consistent with your healthy lifestyle, it is okay to eat whatever you want from time to time. When you abuse the privileges of eating foods in moderation, it could complicate your everyday lifestyle without you even knowing it. I am not telling you to banish these foods out of your diet completely, but because they don't provide any health benefits, it makes sense to scale back. 3 words for you guys: Mind. Over. Matter. 1. PROCESSED MEATS (FILLED WITH SODIUM + NITRATE/NITRITES) -I usually avoid all casings of mystery meat. -I don't eat red meat, but for those that do, moderation is best. -As for poultry; you know you always grabbed the Ranch dressing at your Grandma's on Thanksgiving to dip that turkey in. Why? Because it's bland and unprocessed. That's how you know it's healthy. That is the type of meat I would probably eat. -The quality of the source is the underlying factor of healthy dieting. 2. ARTIFICIAL SWEETENERS (I TRULY BELIEVE ALL FOODS CONTAINING ARTIFICIAL SUBSTITUTES TO SUGAR CANE AREN'T GOOD FOR OUR HEALTH) -Refined sugars too. -Coconut Sugars, Blackstrap Molasses, Manuka Honey are replacements for those that need sweeteners daily, but all sugar in moderation is best. 3. WHITE FLOURED GRAINS (ANY WHITE BREADS, RICES, PASTAS -Poses no health benefits when you compare it to whole grain sources of flour. -If you are trying to lose weight, a diet with white floured foods can hamper the process. -Some white floured foods have a high sugar content. 4. CANDY (GMO'S OUT THE ASS. PICK AND CHOOSE YOUR BATTLES WISELY) -Nothing else really to say here, candy is bad. We all know it. But we still eat it, because we love refined sugar. This was the hardest thing for me to cut out of my diet but from time to time should be okay for someone who lives an active lifestyle. 5. FRIED FOOD (FRYING FOOD IN CERTAIN OILS AT HIGH TEMPERATURES CAN COMPROMISE THE FOOD AND POTENTIALLY KILL OFF ALL THE NUTRIENTS THAT FOOD CAN OFFER) -Frying food in certain oils at high temperatures compromises the food and all benefits the food can offer. -Asparagine is an amino acid that is found in many vegetables, with higher concentrations in some varieties of potatoes. -When frying, oils skyrocket to high temperatures that are unhealthy. When this happens in the presence of certain sugars, asparagine (an amino acid which is a building block of protein) can form acrylamide. -Regardless of what method you use to cook your food, make sure you don't OVERHEAT or OVERCOOK your food to the point where you kill off all nutrients and compromise the benefits. Do Fried Potatoes Really Increase the Risk of Premature Death? There is a new study about the effect fried potatoes have on people. The researchers made this on 4,400 people that were from 45 to 79 years old. These people ate French fries, potato chips, and hash browns for 2 or more times on a weekly basis over the course of 8 years. They came to the discovery that these people actually have increased the risk of early death. The risk is double compared to those people that did not consume fried potatoes. Other Important Factors In the American Journal of Clinical Nutrition, there was a study published about this same topic. And according to that study there is no evidence that there is a connection between the risk of early death and consuming fried potatoes. However, according to the lead author and scientist at the National Research Council that is in Padova, Italy, Nicola Veronese, there is other crucial factor. Other crucial factor that can explain the morality by consuming potatoes is the cooking oil. The cooking oil has rich content of trans-fat. CNN reports that the trans-fat boosts the levels of bad cholesterol i.e. LDL. And that can result in heart disease. Nicola Veronese has hope that the study will serve as a warning to people that consume fried potatoes on a daily basis. Also that these people should lower their intake when it comes to fried potatoes and potato chips. However, this scientist also noted that other crucial factors might increase the risk of early death with people that often consume fried potatoes. The other crucial factors are those like high salt intake, inactivity, and obesity. What is Acrylamide and How to Avoid It An associate professor at Karolinska Institute in Sweden, at the Institute of Environmental Medicine, Susanna Larsson, told CNN that there is no evidence that eating potatoes can increase the risk. Professor Larsson is not part of the study, but she made her own study when it comes to eating potatoes. According to her study there in no connection between increased risk of heart disease and eating potatoes. On the other hand, Stephanie Schiff, a dietitian at Northwell Health’s Huntington Hospital in New York says that there is a threat from consuming starchy foods and fried potatoes. And also that this food is a potential chemical that can cause cancer. The name of the chemical is acrylamide. She explained that acrylamide is a chemical that is a produced when certain foods are at high temperature. Independent studies found direct links between GMOs and the development of numerous conditions, including autism, liver and kidney disorders, neurodegenerative diseases and cancer. Manufacturers soak the popcorn kernels to leave more effectively in a solution that includes a chemical also found in the lighter liquid. Processed potatoes The problem with these amazing snacks is three times: 1. When cooked in oil at high temperatures, the acrylamide compound will develop in most carbohydrates. Processed meat Meat products like hotdogs, sausages and deli meats are loaded with chemicals to extend shelf life. Since they contain cancer-causing nitrates, infant consumption of these foods is related to leukemia, brain cancer and pancreatic cancer. And it's not just lunch meat that can affect your health: A study published in the BMC Medicine found that a high intake of red meat was associated with increased all-cause mortality, including death from cancer. Energy Drinks Although there is no scientific link between energy drinks and cancer, doctors advise against consuming too much caffeine and sugar, both of which are main ingredients in energy drinks. Research finds that adults should have only one serving per day. Due to recent evidence linking daily energy drink intake to heart abnormalities and seizures, regular consumption of energy drinks is not recommended.
